Beef Vegtable Soup

Another easy Soup Recipe with the Insta-Pot.  Beef is nice and tender.

Ingredients
  • 8 cup Beef Stock
  • 3 cup Vegtable Juice (Down below I have a picture of a healthy option for V8)
  • 2 lb Beef (I like London Broil) Cut in cubes.
  • 2 Large Turnips cut in cubes
  • 1 Package Sliced Mushrooms
  • 7 stalks Celery cut in chuncks
  • 1 cup sliced Carrots
  • 1/4 cup Italian Seasoning
  • 3 cloves Garlic diced
  • dash Sea salt & Pepper
  • 1 Large Onion Diced
Instructions
  1. Brown Beef in frying pan until brown on all sides, Add Garlic and Onions. Cook for about 3 minutes.
  2. Add Beef Stock, Veggie Juice and all other ingredients to Insta-Pot and set to soup button or Manuel for 7 minutes. Let pressure naturally release. (about 20 minutes) Enjoy!!
