Chicken Tortilla Soup

This is a rich Tortilla Soup, I add lots of Chicken and for Tortillas, I use Siete Tortilla Chips.

Ingredients
  • 3-4 cup cooked Chicken cut up. (It can be Rotisserie or leftover or just cook up about 4 Chicken Breasts.)
  • 1 White Onion Chopped
  • 4 cloves garlic diced
  • 1 tbsp Paprika
  • 1 tsp ground Coriander
  • 2 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1/4 tsp Cayenne Pepper
  • 6 cup Chicken Stock
  • 28 oz Can of crushed Tomatoes
  • 1 can of fire roasted Tomatoes diced (about 14 oz)
  • 2 Bay Leaves
  • 1/4 cup Fresh cilantro
  • 1 Chopped Avocado for serving.
  • Siete Tortilla Chips
Instructions

  1. In large heavy pot, heat up about 5 tablespoons of oil over med-high heat. Add onions,garlic and all spices. stir and cook for 5 minutes. Add remaining ingredients except Chicken, Avocado and Tortilla Chips. Bring to simmer and cook uncovered for 30 minute. remove Bay leaves and puree the soup in a blender in batches. put back in pot and add Chicken. bring to simmer for about 1 minute.... Put in bowls and Top with Avocado and Siete Tortilla chips.... Enjoy.

  3. Set Insta-Pot to simmer and add 5 Tablespoons of Olive Oil. Add Onions,Garlic and all spice. Cook for 5 minutes. Add remaining Ingredients, Except chicken , Avocados. and Tortilla Chips. Press Soup Button or manual for 6 minutes. When done, release pressure and remove Bay Leaves.Puree in blender in batches. put back in Insta-pot and add Chicken. Press sauté button and simmer for 1 minute.. Put in bowls and top with Avocado and Siete Tortilla Chips... Enjoy!!
