Chicken Vegtable Soup

Gotta love the Instapot!!  This is an easy soup recipes that you can use leftover poultry and whatever Veggies you want!

Ingredients
  • 8 cup Chicken Stock or Bone Broth
  • About 2 cup Chicken or Turkey cooked and cut in pieces (I love Rotisserie Chicken just check label for no added sugar.)
  • 1 cup Chopped Carrots
  • 1 1/2 cup Cubed Turnips peeled (Great Potato substitution!)
  • 1/2 cup Each chopped celery & Green Onions
  • 1 cup Each Kale & Bok Choy
  • 1/4 cup Italian Seasoning
  • Sea Salt & Pepper
  • 1 tbsp Celery Seed
Instructions
  1. Set instapot to Sauté and add Chicken Broth.
  2. Add all ingredients and stir.
  3. Set instapot to "soup" button or manual for 6 minutes. When done, let naturally release pressure (about 30 minutes) Enjoy!
