Chocolate Truffles

Yes I said Truffles!!  And they're Paleo and Keto approved!  This recipe has a lot of variables when it comes to the Olive-A-Sudden Balsamic vinegar.    My Favorite is the Black Cherry, but its very rich. The best balanced one is Cara Cara Orange-Vanilla and Peach. You can use any (strawberry is good too) Makes about 20 Candies.

Ingredients
  • 1/2 cup Balsamic Vinegar (Any Flavor! Try 1/4 cup of Cara cara orange/Vanilla and 1/4 cup of peach. )
  • 4 oz Bakers chocolate unsweetened 100%
  • 1 can Coconut cream Chilled overnight in fridge.
  • 1 tbsp Stevia
Instructions
  1. Start by opening can of Coconut Cream and putting in a stainless bowl. Only put the solid part in . (about 2/3 cup) Put bowl in freezer while doing next steps
  2. Add Your flavored Balsamic to a small saucepan and cook on med. heat while stirring constantly till it reduces down about half. (about 6 minutes)
  3. When done, put Balsamic in small glass bowl then put into larger bowl full of ice. Stir constantly for about 4 minutes or until lukewarm.
  4. With a mixer, blend Coconut cream and Balsamic together until smooth and mixed. put in freezer.
  5. Melt your chocolate either in double boiler or microwave 30 seconds at a time till completely melted.
  6. Add chocolate and Stevia to coconut cream and blend till mixed.
  7. Mix will be soft. put in mini cupcake tins and freeze or refrigerate for about a half an hour. store cold until eaten. Enjoy!!
