Greek Salad

This is a tasty Greek salad,  easy and Healthy.  You can omit the Feta cheese if Dairy is an issue.

Ingredients
    Greek Dressing
  • 6 tbsp Olive Oil
  • 11/2 tbsp Fresh Lemon Juice
  • 1 tbsp Red wine Vinegar
  • 2 tsp Garlic
  • 11/2 tbsp Fresh Parsley
  • 1 tsp Oregano
  • 1 tsp Raw Honey
  • Dash Sea Salt
  • Salad
  • 4 med Roma toatoes Diced
  • 1 Med. English Cucumber cut in Quarters
  • 1 Small Red & yellow Pepper diced
  • 1 small Red Onion diced and rinsed and drained
  • 1 cup Sliced Kalamata Olives or Black olives drained
  • 1 Avocado Diced
  • 4 oz Feta cheese crumbled (if using)
  • 1/2 cup Artichoke hearts diced if wanted. (Make sure to read ingredient labels)
Instructions
  1. Mix all Dressing ingredients in Blender and Refrigerate till serving.
  2. Add all salad ingredients to a bowl and toss to mix. Add dressing when serving... Enjoy!
