Mayonnaise
This one is a great "base" mayo for salads or dressings. I use the Olive-a-sudden Arbequina/Avocado oil mix.

Arbequina Olive Oil
(You can use a light Olive oil too.)

Egg Yolk

Lemon Juice

Cold Water

Instructions

Whisk together all Ingredients except oils. until frothy. Whisking constantly, pour in mixed oils a few drops at a time until mayo begins to thicken. When that happens, add oils in a thin stream while whisking till completely combined. Refrigerate for at least 1 hour.. Enjoy
