Mayonnaise

This one is a great "base" mayo for salads or dressings. I use the Olive-a-sudden Arbequina/Avocado oil mix.

Ingredients
  • 3/4 cup Avocado oil
  • 3/4 cup Arbequina Olive Oil (You can use a light Olive oil too.)
  • 2 Egg Yolk
  • 2 tsp Lemon Juice
  • 2 tsp Cold Water
  • 1/2 tsp Dijon Mustard
  • 1/2 tsp Sea Salt
Instructions
  1. Whisk together all Ingredients except oils. until frothy. Whisking constantly, pour in mixed oils a few drops at a time until mayo begins to thicken. When that happens, add oils in a thin stream while whisking till completely combined. Refrigerate for at least 1 hour.. Enjoy
