The one thing I love around the Holidays is Rack of Pork. You can only usually only find them during that time. I always buy a few and freeze.. Very juicy pork..

Dijon Mustard

Garlic Powder

Instructions

Trim excess fat on Pork (if any). Place pork on a roasting tray with rack and coat with a layer of Dijon mustard and then top with Garlic Powder , Rosemary and Paprika

Bake in oven at 430 Degrees for 25 min. until mustard forms a crust. Lower temp. to 300 Degrees and finish cooking till meat temp. is 150 Degrees. Remove from oven and cover with foil and let rest for 15 minutes.... ENJOY
