I know, What the heck is a Sunchoke. I thought the same thing. saw these at Ralphs and decided to give them a try. Glad I did!! This is a healthy play on skillet fried potatoes, and Paleo approved!!

- Preheat oven to 425
- Mix Olive oil, Garlic, Basil, and Sunchoke slices in bowl till thoroughly mixed
- Spread mixture on a cookie sheet single layer. Bake 10 min then turn over.. Enjoy!
