Roasted Sunchokes

Yields: 4 Servings Difficulty: Easy Prep Time: 10 Mins Cook Time: 20 Mins Total Time: 30 Mins

I thought the same thing. saw these at Ralphs and decided to give them a try.  Glad I did!!  This is a healthy play on skillet fried potatoes, and Paleo approved!!

  • Preheat oven to 425
  • Mix Olive oil, Garlic, Basil, and Sunchoke slices in bowl till thoroughly mixed
  • Spread mixture on a cookie sheet single layer. Bake 10 min then turn over.. Enjoy!
