Roasted Sunchokes
I know, What the heck is a Sunchoke. I thought the same thing. saw these at Ralphs and decided to give them a try. Glad I did!! This is a healthy play on skillet fried potatoes, and Paleo approved!!

Ingredients

Sunchokes cut into 1/4 inch slices. Dont need to peel them

2 to 3
Cloves of Garlic diced small

1/2
cup
Fresh Basil Diced up

1/2
cup
Olive Oil
(I used Rosemary infused, or try some other infused oils.)

Sea Salt & Pepper
Instructions

Preheat oven to 425

Mix Olive oil, Garlic, Basil, and Sunchoke slices in bowl till thoroughly mixed

Spread mixture on a cookie sheet single layer. Bake 10 min then turn over.. Enjoy!
