Roasted Sunchokes

I thought the same thing. saw these at Ralphs and decided to give them a try.  Glad I did!!  This is a healthy play on skillet fried potatoes, and Paleo approved!!

Ingredients
  • 1 1/2 cup Sunchokes cut into 1/4 inch slices. Dont need to peel them
  • 2 to 3 Cloves of Garlic diced small
  • 1/2 cup Fresh Basil Diced up
  • 1/2 cup Olive Oil (I used Rosemary infused, or try some other infused oils.)
  • dash Sea Salt & Pepper
Instructions
  1. Preheat oven to 425
  2. Mix Olive oil, Garlic, Basil, and Sunchoke slices in bowl till thoroughly mixed
  3. Spread mixture on a cookie sheet single layer. Bake 10 min then turn over.. Enjoy!
