Southwestern Shrimp stuffed Peppers

With the holiday season approaching, This is a great Appetizer to bring to parties.  Healthy and Tasty!!

Ingredients
  • 2 bags Baby Sweet Peppers (Makes about 18-20 Peppers)
  • 24 oz Med Shrimp, raw clean and sliced in small chunks
  • 1 cup Mayo (I use my recipes, but you can also use a avocado oil mayo too.)
  • 1 tsp Dill Seed
  • 2 tsp Chilli Powder
  • 1 tsp Celery Seed
  • 1 1/2 tsp Red Wine Vinegar
  • 1/4 tsp Sea Salt & Pepper
  • 1/8 cup Butter
  • 1/2 cup Chopped small celery
  • 1/2 cup Diced small Chives
Instructions
  1. Cook Shrimp in Butter and 1 tsp. Chili powder then set aside to cool.
  2. Mix all ingredients except shrimp in a bowl and refrigerate for a half an hour. mix in shrimp.
  3. Cut peppers in half longways and remove seeds and cores. If you have really small peppers, your can just cut 1/4 of one side. Stuff peppers with Shrimp mixture. dust with Paprika and refrigerate for at least an hour. Enjoy!
